Delivery date is not taken from the IDOC.
STO 6100013779 is created with IDOC 19357583. IDOC has delivery date as 09/26/2016, when converted to STO delivery date in STO is determined as 12/19/2016 in NEQ600

Understand that delivery date in STO is determined by adding the planned delivery time from the order creation date.
For Example: Posted a IDOC "19358438" and created a STO 6100013784 with material 10529743, Updated planned delivery date in the material master as 10 days, the delivery date is calculated for 10 days from today (09/19/2016) and it proposed delivery date as 09/30/2016.

Understand that when the Delivery date which is maintained in the IDOC is updated in the STO when the Delivery Date Flag is checked in Segment "E1BPMEPOSCHEDULX"
Attached is screen shot which shows the field and segment.

Flag Field DELIVERY_DATE as "X" in the IDOC in Segment "E1BPMEPOSCHEDULX", Delivery date would be picked up from the IDOC and system do not propose the Delivery date.
Eg: IDOC 19358455
